Yet another french beans curry with a flavour of coconut.
Serve this as a accompaniment or as a main coarse in lunch or dinner.
Yield: Serves 4
250 grams french beans (fanasi), (फनसी)
1 tbsp oil (तेल)
1/2 tsp mustard seeds (राय)
a pinch asafoetida (हिंग)
1 1/2 tsp ginger-garlic-green chillie paste (अदरक, लेहसुन, हरी मीर्च की पेस्ट)
salt , to taste (नमक)
a pinch soda bicarbonate (खाने का सोडा)
1 tbsp fresh coriander leaves (धनीया)
1 tbsp scraped coconut (नारीयल)
a dash of lemon juice (नीम्बु का रस)
2. Stir and add the French beans and mix well. Add the salt and soda bicarbonate (This will help retaining French beans color).
3. Stir, sprinkle quarter cup of water and cook on medium heat, without covering the pan, for five to seven minutes or till the beans have softened.
4. Add coconut and mix well. Saute for another 2-3 minutes.
5. Garnish with the fresh coriander and a dash of lemon and serve.
